Keto Chicken and Broccoli Casserole

This casserole is easy and delicious!  Fresh broccoli and shredded chicken is baked in cheesy goodness.  It has great flavor and lots of healthy fats!  You can use  rotisserie chicken, as a time-saver and even prepare ahead of time, then bake off later.

INGREDIENTS:

  • 16 ounces chicken breast shredded
  • 4 cups broccoli florets cut into small pieces
  • 2 cups shredded mozzarella cheese
  • 1 cup Heavy Cream
  • 1 cup Mascarpone Cheese
  • 1 cup parmesan cheese cubed
  • 3 cloves garlic
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon salt
  • 2 teaspoons dried parsley
  • 1/2 teaspoon ground pepper

INSTRUCTIONS:

  1. Preheat oven to 375F.
  2. Add the cubes of parmesan to into the bowl of a food processor and pulse until coarsely grated.
  3. Add all the remaining ingredients except the chicken, broccoli and mozzarella cheese and mix until well combined and thickened, to make the sauce.
